Sele Olive Production, SELE OLIVE PROCESSING
In order to process this type of olives, flesh and olives with small flesh like the Gemlik variety should be preferred. Olives must have taken full black color. The olives are Quality Olives washed after the wounded, rotten colored grains and foreign matter are separated. Then the olives are filled with one layer of salt and one layer of olives. It is covered with a cross-stitch cloth and the edges are sewn into the basket and secured. 15-20% of the weight of Buy olives is used as coarse salt. By turning the saddles right-left and upside down every other day, every side of the grain is contacted with salt. Olives are sweetened in about a month. It is then separated from the salt by sieving. No washing. Best Olives oil-vinegar mixture is immersed in liquid and stored.
